Gandhiji's book titled "Moral basis for Vegetarianism" is the one you may get to learn both on Food and Health. It is a Navajivan trust published book of cost Rs. 5.

Let me drop a note to Navajivan regarding the purchase of this book. In the last few days, I realized that how difficult is it to buy Gandhiji's books online, as there aren't Indian sites which sells these books. Perhaps, it's because of the cost factor - as it won't be economically viable to sell a 5 rupees book online.
I'd be happy to take that responsibility of distributing it to the discerning readers.
Apart from Navajivan publications, if you know of any other publications, please do let me know so that I can do a bulk order and send it to people looking for it online.

Finding Gandhi's books online is very difficult and is also not the right thing to suggest. Printed books may be obtained from many Gandhian centres, Gandhi Bhavans across the country.
I do have one printed copy. I have made a digital copy of the book "The moral basis of vegetarianism" online. And, I will be posting the excerpts from the book chapter by chapter in this GandhiTopia blog.
You may ask your friends to connect to this site for viewing and reading the chapters. The complete book extract may be available very soon which is downloadable.
Hope this helps you learn Gandhi's views on food and health.

I happen to read from his autobiography that he ate without salt for close to 10 years and that has triggered lots of interest in me to understand his experiments on Food & Health better.
